Mothers Day Dinner Idea - Steak Salad with Asian Chili Sauce


 

What You Need:


  • 1 lb. beef flank stead
  • 1 T soy sauce
  • 8 oz. rice noodles
  • 1 cucumber
  • 1/2 C Asian sweet chili sauce
  • 1/2 C of water
  • 1 C fresh julienned carrot
  • Fresh cilantro

How to Make It:


  1. Allow the broiler to preheat.
  2. Brush the steak on both sides with the soy sauce.
  3. Place he steak on the broiler pan rack.
  4. Broil 5 inches from the heat for 18 minutes or until a meat thermometer reaches 160 degrees for medium done, turning once during cooking time.
  5. Remove the steak to a platter and slice in thin strips across the grain.
  6. Cook the rice noodles according to package directions.
  7. Drain the noodles well and rinse under cool water.
  8. Slice the cucumbers crosswise into three sections.
  9. With a vegetable peeler cut ribbons lengthwise from each piece.
  10. Place the chili sauce into a mixing bowl. 
  11. Whisk the water into the chili sauce until well combined.
  12. Divide the steak, noodles, cucumber ribbons and carrots into four serving bowls.
  13. Pour 1/4 of the sauce over each salad.
  14. Sprinkle the cilantro over the top of each salad just before serving.

Makes 4 servings


Preparation time:  approximately 13 minutes

Cooking time:  approximately 18 minutes

Total time:  approximately 25 minutes


Moms love a salad and this one can't be beat.  If you can't find Asian sweet chili sauce in your local supermarket Mom's favorite Italian style dressing works just as well.

Minted Steak Salad



What You Need:


  • 1 lb. round steak
  • 1 T olive oil
  • 1/2 t salt
  • 1/4 t pepper
  • 1 (5 oz.) pkg. mixed salad greens with herbs
  • 2/3 C radishes, sliced
  • 1 (6 oz.) container plain yogurt
  • 2 T of fresh mint, snipped
  • 1 C Herbed feta cheese, shredded

How to Make It:


  1. Place a skillet over medium heat on the stove.
  2. Brush the steak on both sides with the olive oil.
  3. Sprinkle the steak on both sides with the salt and pepper.
  4. Place the steak in the heated skillet and cook 8 minutes.
  5. Turn the steak over and continue cooking 6 minutes or until as done as you like.
  6. Remove the steak to a cutting board, cover the steak and allow it to stand for 5 minutes.
  7. Place the salad greens into a large salad bowl.
  8. Sprinkle in the sliced radishes.
  9. Place the yogurt into a mixing bowl.
  10. Add the fresh mint and stir until well combined.
  11. Slice the steak into 1 inch thick strips.
  12. Place the steak over the salad in the bowl.
  13. Pour the dressing over the top of the salad and toss to coat the ingredients well.
  14. Sprinkle the salad with the cheese just before serving.

Makes 4 servings


Preparation time:  approximately 15 minutes

Cooking time:  approximately 14 minutes plus 5 minute standing time

Total time:  approximately 34 minutes


This steak salad will hit the spot when it comes to giving Mom the perfect Mothers Day dinner.  Tomatoes, onion and mushrooms can also be added if you like.


If you have leftover steak or prefer another type of steak use it instead of the round steak.  Adjust cooking time for browning and heating.

Focaccia



Ingredients:


  • 9 Tablespoons olive oil, divided use
  • 3 Cups unsifted all-purpose flour
  • 3/4 Cup unsifted semolina flour
  • 1/2 Teaspoon salt, divided
  • 1 1/2 Tablespoons quick-rising dry yeast
  • 1 1/2 Cups hot milk (between 120 to 130 degrees F)
  • 1 Tablespoon fresh rosemary leaves

Method:


  1. Pour a 1/2 tablespoon of the olive oil into a 9-inch square cake pan; spread to cover bottom and sides.
  2. Place all-purpose flour, semolina flour, 2 tablespoons of the olive oil, 1/4 teaspoon of the salt and all of the yeast in the bowl of a mixer fitted with a dough hook or you can mix by hand.
  3. Mix ingredients on medium speed. Reduce speed to low and slowly add hot milk. Increase the speed to medium and continue mixing for 5 minutes, then knead about 10 minutes by hand.
  4. Dust the bottom of cake pan with a little flour. Remove dough from bowl and spread out evenly in pan. Cover with a towel and let it rest for 30 minutes.
  5. Preheat oven to 400 degrees F.
  6. Remove towel and brush dough with 1 to 2 tablespoons of the olive oil. Dust the top with additional salt and rosemary.  Bake for 20 minutes.
  7. Remove from oven and drizzle with remaining oil.

Serves 6-8

Fruit That Says I Love You Mom


What You Need:


  • 1/4 C of fresh peach slices
  • 1/4 C of fresh pineapple slices
  • 1/4 C of fresh raspberries
  • 1/4 C of fresh black berries
  • 2 slices of fresh watermelon

How to Make It:


  1. Place the peaches onto a serving plate.
  2. Layer the pineapple slices over the peaches.
  3. Sprinkle the raspberries and black berries over the top.
  4. Using a heart shaped cookie cutter cut out 8 to 10 pieces of the watermelon.
  5. Place the watermelon cut outs around the outside edge of the plate.

Makes 1 serving


What better way to tell Mom how much she is appreciated.  This fruit salad made by a child's own hands will give Mom that special something to always remember. 


Any type of fruit will work.  If you can find letter shaped cutters cut out I Love You Mom and place across the center of the plate before adding the fruit around it.
