Creamy Fruit Bites New Years Party Recipes


What You Need:

 

  • 24 round butter flavored crackers
  • 1 (3 oz) pkg. cream cheese, softened
  • 1 C strawberry preserves
  • 1/2 C almonds, sliced and toasted

How to Make It:


  1. Spread the cream cheese on each cracker round making sure you leave a slight edge around the cracker.
  2. Dollop a small amount of the strawberry preserves into the middle of the cream cheese.
  3. Sprinkle the almonds over the preserves.

Serving Size:  24


These little treats are easy to make and enjoyable to eat.  Use dried cranberries instead of the strawberry preserves.  Other types of preserves will work also along a variety of nuts such as broken cashews, pecan pieces and even roasted peanuts. 


Peachy Pepper Pumpernickel Bread


What You Need:

 

  • 1/2 C peach preserves
  • 1 red jalapeno pepper, seeded and chopped fine
  • 1 green jalapeno pepper, seeded and chopped fine
  • 2 (4 oz) pkgs. cream cheese
  • 16 slices cocktail pumpernickel bread

How to Make It:


  1. Place the preserves into a small mixing bowl.
  2. Add the red and green chopped jalapeno peppers and stir to combine well.
  3. Cover the cream cheese with the preserve mixture.
  4. Spread the mixture on the pumpernickel bread and serve.

Serving Size:  16


If you can't find red jalapeno peppers 2 green ones will work.  The red gives the spread a little extra color.  Even yellow and orange jalapeno peppers will work.  This spread also tastes great on cocktail rye bread. 


Sweet Pecan Nachos


What You Need:

 

  • 6 (8 in) flour tortillas
  • 7 T butter, melted and divided
  • 6 T sugar, divided
  • 1/2 t cinnamon
  • 1/2 C heavy whipping cream
  • 1/3 C brown sugar
  • 1 (1 oz) square unsweetened chocolate, broken into pieces
  • 1/2 t vanilla
  • 1/2 C pecans, chopped

How to Make It:


  1. Place the oven temperature on 350 degrees and heat while preparing the tortillas.
  2. Brush the tortillas on both sides with 4 T of the melted butter.
  3. Combine 2 T of sugar and cinnamon together in a small mixing bowl.
  4. Place the cinnamon sugar mixture into a salt shaker and shake the mixture over one side of each of the tortillas.
  5. Stack the tortillas on top of each other making sure the cinnamon sugar side is up and cut into wedges.
  6. Layer the wedges in a single layer on an ungreased cookie sheet.
  7. Bake 10 minutes or until crispy.
  8. Remove the tortillas from the oven and set aside to cool slightly.
  9. In a heavy saucepan over medium heat whisk together the whipping cream, brown sugar, the remaining 4 T of sugar and the remaining 3 T of melted butter.
  10. Bring the mixture to a brisk boil being sure to stir continuously.
  11. Stir and cook for 5 minutes or until the mixture just begins to thicken.
  12. Remove the saucepan from the heat and quickly stir in the chocolate and vanilla.
  13. Continue stirring until the chocolate is completely melted and the mixture is very smooth.
  14. Allow the mixture to cool just slightly.
  15. Arrange half of the tortilla wedges on a large platter.
  16. Trickle half the chocolate mixture over the tortilla wedges.
  17. Sprinkle half of the pecans over the top of the chocolate.
  18. Repeat the layers again. 

Serving Size:  12


Many times children will be present at New Year’s Eve parties.  Most children like to eat the appetizers but many of them are too rich or too spicy for children.  Place this on the appetizer table and you will be a hit with any children who might be joining you.
